enticing eats: spaghetti squash

Spaghetti squash is a great alternative to pasta, potatoes, or rice. The cooked squash shreds into threads like thin spaghetti or vermicelli. On average, a spaghetti squash measures about 12 inches in length and about 6 inches in diameter. The squash should be an even light yellow colour and firm with no bruises. Spaghetti squash is available year-round with peak season in fall. The best part is it's ridiculously easy to make.



Steps
1. Halve and seed squash
2. Put upside down on lightly greased baking sheet
3. Bake in 400 degree F oven for about 1 hour or until flesh is easily pierced
4. Using a fork, gently scrape cooked strands from squash and transfer to a large bowl
5. Serve with sauce of choice and grated cheese

 We chose to serve our spaghetti squash with tomato, zucchini, and mushroom sauce.
